Lorena Garcia’s Chocolate Mousse Martini with Fresh Strawberries
Makes 6 servings Preparation time: 15-20 minutes Refrigeration: 20-30 minutes
4 eggs, separated 2 tbs water 3/4 cup SPLENDA® No Calorie Sweetener, Granular 8 ounces dark chocolate, chopped 1 quart reduced fat whipped cream 1 cup strawberries 1 sprig of mint
PLACE the egg yolks and water in a mixing bowl over a pot of water or use a double boiler on medium-low heat for about 3 minutes – continually whisk. Be careful not to scramble the eggs.
Add 4 tbs SPLENDA® Granular and whisk until pale yellow and fluffy. Remove from heat and set aside.
PLACE the chocolate in a separate double boiler on low heat until the chocolate is melted.
MIX the egg whites in a mixing bowl at high speed until fluffy. Set aside.
BLEND the reduced fat whipped cream and the remaining 4 tbs of SPLENDA® Granular in a mixing bowl.
FOLD all ingredients until well incorporated.
REFRIGERATE before serving.
PLACE the strawberries in the bottom of the martini glass, cover with mousse, and place a strawberry on top with a mint leaf for garnish. Serve immediately.
